Introduction: My Journey with Coeliac Disease
Allow me to introduce myself. I am someone who has had a unique culinary journey, one that has been shaped by my diagnosis of coeliac disease a few years ago. Growing up in a household where traditional Gujarati meals were the norm, my taste buds were accustomed to the flavors of Indian cuisine. However, my love for food extended beyond the borders of my culture, as I also enjoyed indulging in Italian, Mexican, Spanish, Chinese, Greek, Thai, and various other cuisines.
A Twist in the Tale: Coeliac Diagnosis
But then, life threw me a curveball. I was diagnosed with coeliac disease, and suddenly, my food world was turned upside down. Coeliac disease is an autoimmune condition that requires strict adherence to a gluten-free diet. This meant that I had to find ways to enjoy my beloved traditional Gujarati dishes without the presence of gluten, as well as adapt other cuisines to suit my dietary needs.
Embracing the Challenge: Gluten-Free and Flavorful
Instead of feeling disheartened, I saw this as an opportunity to embark on a culinary adventure. I started experimenting with gluten-free dishes, determined to find alternatives that would not compromise on flavour or compromise my health. It was a challenge, but one that I embraced wholeheartedly.
Through trial and error, I discovered innovative ways to create gluten-free versions of my favourite Gujarati dishes. I experimented with alternative flours, such as rice flour, chickpea flour, and tapioca flour, to recreate the textures and tastes that I have grown up with. I also explored the world of gluten-free ingredients and discovered a whole new array of flavours and possibilities.
Not only did I adapt traditional Gujarati cuisine, but I also ventured into other cuisines, finding ways to enjoy Italian pasta dishes, Mexican tacos, Spanish paella, Chinese stir-fries, Thai curries, and a wide range of Asian delicacies, all gluten-free.
Today, I am proud to say that I have successfully created a repertoire of gluten-free recipes that are not only delicious but also healthy. My journey with coeliac disease has taught me to be creative in the kitchen, to think outside the box, and to never compromise on flavour. And now, I am excited to share my experiences and recipes with you!
